Count David’s Delectably GREAT Crepes

Count David’s Delectably GREAT Crepes may be made with French Brandy, but they won’t get you intoxicated!  The alcohol of the Brandy cooks away leaving behind an incredible flavor that is unmatched by any other crepe, they are truly delicate and so tasty.  Whether you’re serving them cold filled with yogurt and fresh fruit or serving them hot with butter and maple syrup, they will always be an appreciated delectable treat.  You can let your imagination run wild with how to serve these delicious thin crepes.  I’ve had them with everything from ice cream to Belgian chocolate and each time I think it meets or beats the previous way I had them.  You can make a big batch and refrigerate them for a week, or freeze them for a future treat.  I think you’ll enjoy them as much as my family does and you’ll look forward to adding to the list of incredible ways to serve them.

Ingredients:

  • 1 1/2 cups of whole milk.
  • 3 large eggs.
  • 3 Tablespoons sugar.
  • 1/2 teaspoon salt.
  • 5 Tablespoons salted butter, melted.
  • 1/2 cup of French Brandy V.S.O.P.
  • 1 teaspoon organic vanilla extract.
  • 1 cup all-purpose flour.
  • additional butter for cooking.

Preheat oven to 200 degrees

Instructions:

  • Using a large bowl or large electric blender, combine milk and eggs.
  • Add sugar, salt, butter, brandy, vanilla, and flour, combine until silky.
  • In a medium to a large non-stick frypan over low heat, add a small amount of butter.
  • Add just enough crepe mixture to coat the bottom of the pan while tilting the pan in all directions to spread a thin layer of batter across the bottom of the pan. Cook until golden brown.
  • Using a flexible plastic spatula, flip the crepe and continue cooking until golden brown.
  • When the crepe is golden brown on both sides, fold the crepe in half and then again into a 1/4.  Remove from heat to an oven-safe dish or cookie sheet.
  • Transfer the oven-safe dish or cookie sheet to the pre-heated 200-degree oven to keep the crepes warm.
  • Repeat process until all crepes are made and ready to serve!  Bon Appetit!!!

A few serving suggestions:

  • Spread half of a crepe with your favorite jam or jelly and roll it up.
  • Spread a thin layer of butter and roll up the crepe and top with Maple syrup.
  • Spread peanut butter over half the crepe and roll, cover with chocolate for a tasty treat.
  • Spread half the crepe with organic vanilla yogurt and your favorite fruit, roll, and top with a thin layer of yogurt and nuts.
