Crab and Shrimp Mac N Cheese

1 Pound of Rigatoni Noodles

1/4 Cup of Butter

1 Medium Shallot diced fine

4 Cloves of Garlic, minced

2/3 Cup of Flour

2 Cups of Half n Half or Milk

Salt and Pepper to taste

1 Cup of Cheddar

1 Cup of Sharp Cheddar

1 Cup of Mozzarella

1 Cup of Monterey Jack

1 Cup of Colby

1 Pound of Cleaned Crab Meat

1 Can Evaporated Milk

1 Pound of Cream Cheese

Fresh chopped Parsley for garnish

 

Preheat oven to 375 degrees.

 

In a large pot, cook noodles per package instructions for al dente.  Line a 12″ x 16″ x 2′ pan with enough cheese to cover the bottom.  Drain noodles and add to prepared pan.  Add Crab and Shrimp to the noodles and set aside.

In a large skillet over medium heat, melt butter and add shallot and garlic, sweat them for about 3-4 minutes until soft.  Add milk/half and half, salt, and pepper and simmer for 1-2 minutes.  Add flour and stir to combine, keep sauce moving until smooth and thickened.  Begin stirring in all the cheeses until completely combined.

Combine sauce to the pan with noodles, Crab, and Shrimp and mix thoroughly and set aside.  This will allow Cheese mixture to be absorbed by the noodles.

Return large skillet to heat.  Combine 1 can of Evaporated Milk with Cream Cheese and stir until melted and combined.  Now add mixture to the noodles and cover with remaining cheese.

Bake about 20 minutes until top is golden brown.  Garnish with fresh Parsley.  Bon Appetit!!!
