Mushroom Swiss Cheeseburger Stuffed Biscuits

This is such a fun and fast recipe to make for your hectic family days when there’s just not enough time in a day.  It’s a classic Mushroom Swiss Burger in a Biscuit!  These Mushroom Swiss Cheeseburger Stuffed Biscuits freeze well and heat up fast in the oven or the microwave.  Unlike store-bought snack pockets, Mushroom Swiss Cheeseburger Stuffed Biscuits are filled with ground beef, sautéed mushrooms, onions and a healthy amount of Swiss cheese to make this a meal in a biscuit.

Ingredients:

  • 1 pound of lean ground beef.
  • One package of 8 count Pillsbury Grands Southern Homestyle Biscuit.
  • 16 oz can of mushrooms.
  • 1 small onion, diced.
  • 2 Tablespoons of parsley.
  • 1 clove garlic, minced.
  • 1 teaspoon dried thyme.
  • 1/2 teaspoon salt, divided.
  • 1/2 teaspoon pepper, divided.
  • Extra virgin oil.
  • 1 egg, beaten and set aside.
  • 16 ozs. Swiss cheese (or any other soft cheese, mozzarella, Colby-jack etc.)

Instructions:

  • In a large pan over medium-high heat, sauté onions in olive oil until tender and translucent.
  • Add mushrooms and continue cooking until mushrooms are tender and golden brown.
  • Add salt and pepper to taste.
  • Remove ingredients and set aside.
  • In the same pan, add ground beef, salt, pepper garlic, and, thyme.
  • Saute until brown and thoroughly cooked.
  • Drain off all rendered fat and discard.
  • Add parsley and mix well.
  • Combine the mushrooms and onion mixture with the ground beef.
  • Place 8 slices of cheese over the mixture and allow to melt, and combine thoroughly.
  • Remove from heat and let cool.
  • Preheat oven to 375 degrees.
  • Separate the biscuits and set aside.
  • Using a rolling pin, roll each biscuit into a 6″ by 6″ disk.
  • Add a liberal amount of filling to each disk and top with additional cheese.
  • Gently fold each biscuit disk in half to form a half circle, use a fork to seal the edges.
  • Place the biscuits on a sheet pan and brush the biscuit with the egg wash.
  • Bake for 12 minutes or until golden brown.
  • Bon Appetit!!!
