Chile and Lime Cod Fish

  • 2 lbs of Cod Filets
  • 1 Teaspoon Paprika
  • 1 Teaspoon Dried Parsley
  • ½ Teaspoon Oregano
  • ½ Teaspoon Chili Powder
  • ½ Teaspoon Garlic Powder
  • ¼ Teaspoon Cumin
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Freshly Ground Black Pepper
  • 1/8 Teaspoon Cayenne Pepper
  • 4 Tablespoons Extra-Virgin Olive Oil,
  • Zest and Juice a large Lime

In a small bowl combine all of the spices and mix well.  Zest and juice Lime and add to mixture.  Add the olive oil and mixture well.  Now paint all sides of the Cod Filets with the mixture making sure to get all the spices evenly on all the filets, now let stand for 30 minutes to absorb the mixture.

Preheat the oven to 400º.  Place the Cod filets on a silicone mat or foil-lined baking sheet and bake in the oven for 8 to 12 minutes – keeping an eye on it.  You don’t want to over-cook the fish.  Cod will flake easily and become opaque throughout when it’s cooked.
