Corned Beef & Cabbage Feast
This slow-cooked delicious meal will make you appreciate the Irish and wish every day was St. Patty’s Day. The good news, you can make it any day. Amazingly tender and juicy corned beef brisket with vegetables in a savory beef broth. This traditional Irish dish will amaze the entire family and they’ll think you’ve been slaving all day to make it… It will be our little secret how easy it is to make!
Prep Time: 15 minutes Cook Time 3- 3 1/2 hours Servings: 8
Ingredients:
- 3-4 pound Corned Beef Brisket.
- 1 season packet (included in the Corned Beef Brisket packaging).
- 4 cups beef broth.
- 2 Tablespoons brown sugar
- I head of cabbage cut into 2″ wedges.
- 3 large or 6 medium-size carrots, cut into 3″ pieces
- 2 large onions.
- 4 large red potatoes, cut into quarters.
- 2 Tablespoons Dijon mustard.
- 1 can of beer (Lager).
- Salt and Pepper to taste.
Directions: Preheat oven to 350 degrees
- Using a covered roasting pan, add beef broth and beer.
- Cut one onion into 3 equal slices and place in roasting pan.
- Place corned beef brisket, fat-side up on the onions.
- Spread mustard over the brisket.
- Sprinkle brown sugar over the mustard
- Add seasoning packet to the beef broth.
- Cover pan and bake 2 hours.
- Uncover pan and arrange cabbage, potatoes, carrots, and onions around brisket.
- Return pan to oven and cook uncovered for 1 hour or longer (until brisket is fork-tender).
- Let rest for 10 minutes before slicing.
